Working on my candy recipes for this years Christmas mailings. I am always pushing the envelope with new recipes. Years past have included chili based ones (still very popular), tea (so so), and mixed drinks (the favorite).
I have discontinued several ones that just weren't that popular and now have room for a couple new ones. I want to play with some of the wine pairings that are so popular in the haute cuisine crowd, but I realise that most of the people I deal with aren't wine drinkers. So I want to play with beer and chocolate pairings. I have found some guides and will play with some but one of the ideas I have bouncing around I have no idea what to use.
I want to make a layered truffle based on a black and tan. I know without a dought the "black" is Guiness paired with dark chocolate but what beer is the "tan"? I'm not a beer drinker so I no ideas. I would guess to pair it with a mild chocolate such as a white or maybe a very mild milk.

Thx. Went through the article and learned quite a bit. I think I will try either Bass or Harp. I just also have to find people who would know if the end result taste good or not.

Well found a place where I can get individual bottles. Picked up a bottle of Guinness (extra stout), Bass, Harp, and Corona.
I will do a single of each flavor and than try a black (Guinness and dark chocolate) and tan as well as a half and half. With the Corona I will try it with white chocolate and a twist of lime juice/oil.
I will have to figure out if I want to go with the lighter taste of white chocolate with the Bass and Harp so the beer come through stronger or play it with the caramel overtones of milk chocolate. I was also recommended to pair the Guinness with a caramel center.
