Hi all,

Got a person on another forum looking for a shortbread recipe and I thought I remember that someone had an award winning one here, maybe Jim?

Only a few years late!

Ingredients

2 cups of butter, softened
1 cup packed brown sugar
4 to 4 1/2 cups all-purpose flour

Directions

!. In a large bowl, cream the butter and brown sugar until light and fluffy. Add 3-3/4 cups of flour and mix well. Turn onto a floured surface. Knead for 5 minutes, adding enough flour to form a soft dough.

2. Roll to 1/2 inch thickness. Cut into 3" x 11" strips. Place 1 inch apart on ungreased baking sheets. Prick with a fork. Bake at 325 degrees for 20-25 minutes or until cookies are lightly browned.

Yield: about 4 dozen

I baked these last night to take to the Volcano Christmas Walk tonight.IMG_20141213_102704.jpg
